As a happy-to-be-here-but-miss-the-food Philly native, the “Greghini’s Bring Philly to the Wild Hare” (On the Table, April 30) headline ignited a little hope in my soul. Upon reading they use mayo in the hoagie and may offer Cheez Whiz for the cheesesteak, hope died.

The fundamentals that make a hoagie, as prepared by Italian immigrant wives for their husbands working at the shipyard on Pig Island, means never mayo. True Philly folks skeeve mayo. Only a dirtbag would touch the roll with mayo.

The cheesesteak has white American or Provolone. No Cheez Whiz unless you are a smarmy politician in a photo op trying too hard.

Props to the Greghini’s for the Amorosos and the hot and sweets. I can’t wait to try everything, and expect to visit frequently. I thank them and will spread the word to my local converts, as long as we agree to observing the purity, upholding tradition and preserving the sacredness of these iconic foods.
